Apples are sometimes ripened using chemicals, but it is important to understand that not all chemical ripening is harmful. Naturally, apples produce a gas called ethylene, which is a plant hormone responsible for the ripening process. In commercial practices, especially when apples are transported over long distances, they are often harvested while still unripe and later ripened in controlled ripening chambers using artificial ethylene gas. When used in proper and regulated amounts, this method is considered scientifically safe and does not pose a health risk.
The real concern arises when unethical traders use calcium carbide to ripen apples quickly. Calcium carbide releases acetylene gas, which forces rapid ripening but is toxic to human health. The use of calcium carbide for fruit ripening is illegal in many countries, including India. Apples ripened this way may appear very shiny and uniformly colored on the outside but are often hard, tasteless, or partially raw inside. In some cases, apples are also coated with wax to enhance appearance and shelf life; although food-grade wax is generally safe, it should still be washed off before consumption.
To stay safe, consumers should wash apples thoroughly before eating, preferably soaking them in warm water for a few minutes or washing them with water mixed with a little salt or baking soda. Avoid apples that look unnaturally glossy or lack natural aroma, and whenever possible, choose local and seasonal apples.
